I have collected a record number of kilos of brambles this year.
I decided to have a go at bramble jelly.
The juice extraction took a while and the kitchen and I looked like a murder had taken place.
Making the jelly was quick but although I followed the quantities carefully, I managed to overdo the special jelly making sugar.
My neighbour who has been making conserves for over 60 years advised me to inverse the jars.
I did this but I have now turned them back but the jelly has set so firmly that it has stayed at the top of the jars.
I opened one today and the consistency is very like those jelly fruit sweets you can buy. It does taste lovely but it looks pretty strange.
